Marmalade
VSP is here for all of you, (even the marmalade haters) cooking up a range of marmalade options; citrus-free, sweet+mild, and brusque traditional options too. Textures range from wobbly (call that the “Euro set”) to hard set.
We have our marmalades sorted below in a range from Brusque to Hearty to Wild Cards to Mild-Mannered, for ease of exploration and shopping.
Brusque!
For the most adventurous marmalade eaters — like Amy who appreciates a marmalade with bite. I love making toast for Amy, frying the bread in a buttered skillet, making the first flip in the pan and spreading marm into the still-browning muffin, the jelly portion melting deep into the crumb, mingling with salty butter.
Hearty Marmalades
You’re ready for a bit more flavor… like the fan-favorite, Earl Grey Meyer Lemon Marm.
Wild Cards!
Through Four Season’s Produce, I source organic citrus from Buck Brand aka Deer Creek Heights Ranch. Their citrus inspires annual creativity during a time of year, winter, that is quiet enough for recipe writing and experimentation. This year, for the first time, I worked with the Buck Brand Limequats (a 100% lime and kumquat flavor mashup) and T’Orange Lemons (taste like lemonade - they are lemons with no bitterness which is frontier-opening for flavor composition because it means you get all the pectin of a lemon and no bitterness to counteract). Both a revelation. The Limequat Marmalade is packed full of bright sunshine including those T’Orange Lemons and (some off-the-charts juicy, tangy) tangerines plus a tiny bit of our honey candied ginger! Next, I made a milder version of last year’s Seville Orange Apricot Chamomile - it’s really apricot forward and finally, the beloved 2020 wild card flavor of Earl Grey Meyer Lemon returns too.
Mild Mannered Marmalades
For those who are just dipping their toes into marmalades, or those who prefer a more mellow bitterness. Looking for an easy introduction? We call Pear Lemon Sage White Pepper the marmalade for all and all foods.
