Yuzu Pummelo Lavender & Rose Marmalade
Here’s how this one works. The jelly or body of the marmalade is made from lemon, apple scraps, yuzu scraps and yuzu juice. The texture (chewy bits) is African Shaddock Pummelo rind. All winter we use the inside of this fruit for salads at our restuarant, Minifactory, and save all the rind for marmalade. Rose petals and lavender are stirred in at the end. This is probably my favorite of the 3 wild card marmalades this year. It’s mostly jelly and a whisper of texture from the super finely shredded pummelo.
This marmalade contains: Honey, yuzu, apple, lemon, meyer lemon supremes, African Shaddock Pummelo, rose and lavender blossoms
