Pear Lemon Sage White Pepper Marmalade

A savory marmalade of pears and lemon that plays with the traditional flavor pairing of pears and sage. The marmalade is cooked with a sachet of lavender flowers, crushed peppercorns and finished by steeping fresh sage leaves. 

This marmalade is fantastic with aged goat cheeses, Tomme, Parmesan, Pecorino.
