Saffron Chamomile Seville Orange Apricot Marmalade
Chamomile and apricot? a classic combo! but chamomile & saffron!? This flavor idea got going because of a tea blend of chamomile & saffron that our vanilla bean supplier always sends with our spice orders.
With the quieter pace of winter production and the extraordinary “never gets old” lemon and orange kitchen-steam-baths of January and February preserves making, I’m almost always inspired during this time of year to construct a new marmalade flavors. I call them Wild Cards.
This 2023 Wild Card marmalade received a small makeover in 2024. The goal? More apricot flavor and an easier eating experience quicker, which meant bringing down the bitterness. We let go of the hybrid pounding and chip method and went all chip/shred and jelly.
Seville jelly, navel orange shred, sultanas and Royal Blenheim apricots plumped in lime and meyer lemon juice. Sevilles mean robust citrus flavor. Everything is combined with autumn honey, a big sachet of chamomile and a generous pinch of saffron.
This marmalade contains: honey, orange, lemon and lime juice, sultanas, dried apricot, chamomile, cinnamon, saffron.
