This jam was the happy result of an experiment gone wrong as I attempted to streamline the Quince Rose Geranium Marmalade recipe in 2013. The experiment did not work and left me with pounds of quince puree. This mishap eventually led to creation of many new flavors that I still make today. If you have ever wondered why quince appears in 60% of the recipes in the latter quarter of the year, it all goes back to that 2013 Quince Marmalade experiment.

The flavor here is bright. Sour cherries have an unmistakable flavor, which always make me think of slices of sour cherry pie and warm clafoutis nestled in a well of cream. This makes a wonderful and extraordinarily versatile cheese companion.
