Honeyberry (Haskap) Jam
Haskaps or Honeyberry are fruit from a hardy shrub that produces berries late June - early July. Haskaps look like long blueberries, but this fruit packs more acidity and floral flavors. I think of this as “the superior blueberry jam”. Honeyberry bushes produce these bell like flowers in the cold of spring that hold water droplets beautifully. The shrubs are bush and are not huge producers which makes these especially time consuming berries to pick. Unusual, delicious, this fruit is organically grown and picked by The Farm Between in Jeffersonville Vermont which is now run by Sterling College.
