3 Seasons of Summer

I am excited to present preserves from 3 corners of summer, the strawberry beginning, the apple interlude and the plum ending. Preservation and cooking is all rhythm. Summer holds its own patterns built mostly with berries and stone fruit but in the middle, the Dolgo Crabapple screams for attention in late August. While I wait for the European plum varieties to ripen, we mill crabapples with rosehips and make my favorite preserve for cheese and savory cooking, Dolgo Crabapple Rosehip.
