Quince Marmalade

This is the thing to eat with Sheep's cheese. The quince comes from Scott Farm in Dummerston Vermont and gets a light infusion of rose geranium from our farm. The preserve has a beautiful firm set. The jelly is interspersed with pieces of honey poached quince pieces.

Ingredients: vermont quince, honey, lemon juice, rose geranium, grappa.
